Founded in 1874 by Jesús Aguirre Panamá and now managed by the fourth generation of the Aguirre family, El Injerto is one of Guatemala's most celebrated coffee farms, having placed in the Cup of Excellence finals fifteen times and amassing seven first place awards.

Located in the highlands of Huehuetenango, the farm is renowned for the cleanliness and precision of its farming and milling operations. Coffee pickers are paid well and provided housing, food, and recreation areas on the farm, encouraging many to return each harvest season. This allows El Injerto to retain experienced pickers who are deeply familiar with their high standards.

This lot showcases the Pacamara variety, a hybrid of Maragogipe and Pacas that is notoriously finicky to roast, but rewards careful handling with a nuanced and elegant cup marked by lively acidity and a creamy, full body.
